Salad made with Path of Life Organic Quinoa & Kale


Ingredients:

    2 pkgs (10 oz.) Path of Life Organic Quinoa & Kale
    ½ cup grape tomatoes, halved
    8 slices turkey bacon, cooked and cut into 1-in. pieces
    1 med avocado, diced
    ½ cup honey mustard dressing (see tip)


Instructions:

TIP:   To prepare your own honey mustard dressing for this recipe, combine 4 tsp each; Dijon mustard, honey and white wine vinegar in a small mixing bowl. Slowly whisk in 1/3 cup canola oil.

    Prepare Quinoa & Kale according to package instructions. Cool to room temp.
    Combine quinoa, tomatoes, bacon, avocado and dressing in a medium mixing bowl. Mix well.
