To be authentic, country cooking must contain at least one of the two major food groups--grease or Coca Cola.  You are not country if you saute in olive oil or butter.  Bacon drippings are the secret of all good home cooks as this classic Kentucky recipe illustrates.  As with all such recipes, some measurements are approximate.

Wilted Lettuce Salad (pronounced salat)
  • 1 bowl fresh head lettuce, torn into pieces
  • 2-3 chopped green onions
  • few slices crisp bacon crumbled
  • 4 tbs. hot bacon drippings
  • 2 tbs. vinegar or to taste
  • salt and pepper
  • Combine drippings and vinegar; pour over salad ingredients and toss well; depending on the amount of lettuce, you may need to add more dressing; leaves should be coated but not greasy or soggy
