These are the leaves of a southern European evergreen shrub Lauracea Laurus nobilis. They are an important component of a bouquet garni. Bay leaves can be purchased fresh or dried.



Uses: To flavour stock, court bouillon, marinades, soups, sauces, fish and casseroles, remove the leaves before serving. Fresh bay leaves can be used to garnish a variety of savoury dishes.



To store: Keep dry leaves in a cool, dry cupboard away from direct
sunlight. Fresh leaves can be stored in the fridge for up to 1 week.
